You will have no problem finding places to drink in Huntington Beach. Its a big party area for all ages but mainly the younger crowd.
Not much rock climbing that I know of since its not my thing but I'm sure there are some Indoor places all over. I know in the 24 Hour Fitness center by John Wayne Airport they have a rock wall that is like 200 feet tall.
As far as biking just head towards South Orange County and the Foothills and such. Look up Santiago Cyn. Rd. Anything back there.
I live down in the Mission Viejo area but its called Trabuco Canyon. I'm basically Mission Viejo but waaay back in the hills down the street from the Oakley Headquarters.
