I'd say any bike that's japanese and around 600cc's would be a good starter. My dads 85 Ninja 600R has around 60K miles on it and he just took it in for service. All it needed was a very slight valve adjustment. That's it.
If I was in the market for a bike I'd probably look for a late 90's ZX6-R or maybe a CBR from Honda. F3 or F4 maybe.
