    That's not quicktime in the first link. It's Flash.

    Most new digital cameras come with programs for stitching photos together, or you could do the work yourself in photoshop.

    The pan is done in flash and it's just moving a movieclip left to right, with a duplicate following it so you can't tell where the picture ends or begins.

    The zoom effect is just scaling a movieclip with the image inside of it whenever the user presses a certain key. You can tell it's a flash zoom because the image lost some quality when it zoomed.
