working in AV for 5 years I suggest white with black text or text on a blue background... blue is the brightest color on LCD projectors and the recommend background by most professionals. It doesn't have to be completely plain- you can create a interesting yet basic background with shades of blue.
- Always use readable fonts at medium sizes
- Keep your info uncluttered... less is more
- animation is completely useless unless needed to make a particular point. Its not a new concept anymore and doesn't amuse anyone except it's creator
- Open up your presentation before you toggle over to the screen... no one needs or cares to see your desktop
- When you are finished with your last slide- if you are still standing there, answering questions- whatever- press the letter "B" key to blacken the screen. No one wants to see you in PowerPoint editing mode.
