i use a pc for multitracking, but the software and hardware are available for both platforms. personally, i use an Edirol (roland division) UA-5 USB break-out box ($300) as my audio interface which i run a behringer eurorack mx-602A ($60 for 6 channels!) mixer into. this does not allow me to record more than two mono (or one stereo) tracks at once, however, so it might not be what you're looking for. software wise, i've fallen in love with cubase sx ($600 or $300 for the limited edition). zero latancy VST instruments (especially steinberg's LM-4 drum machine, $50) are a godsend.
