I kicked off a very special ramen project today. It's got a lot of components, and the final result won't happen until thursday.
But it all starts with this here beef stock I made (just shy of 4 litres). It's got roasted oxtail, charred leek, charred onion, garlic, and ginger.
And it's fucking delicious. I'm off to a good start.
