I gotta thank you nairn, for accidentally turning me on to spanish cooking. Made my first tortillas espaniola today and it was delicious! Also really dig their bean stews and it’s opened my eyes to the saffron and cumin combo, which i use a lot now. I like that they have a lot of vegetarian dishes that look and taste complex while using simple ingredients and good technique.

    So yeah, cheers!

    • Oh! I think you put yourself on to Spanish cooking, no? It IS good though - so much cross-over with N.African and Middle Eastern flavoursNairn
    • Like that Garbanzo stew you linked (and I cook every week or two) has mutated and now has cumin and turmeric in, which are both a bit 'Moorish'.Nairn
    • (..also, spinach and chorizo - god, I really do like that recipe). Can't remember if you're a meatatarian, but if so, look into pinchos morunos ...Nairn
    • ...that said, I've never found a recipe online that matches what I used to eat in the south, buying either the spice mix or the marinaded meat from the marketNairn

    • I’ve never eaten so much cumin in my life. It’s in almost EVERY indian dish i’ve learned so far. I also make a lot of mexican food, and they use it a tonscarabin
