    I'm hoping we're not more than a decade out from some kind of vat-grown 'dairy molecule' substitution.

    Same too vats of complex meat and fat molecules, lipids, long-chain whatevers.

    Maybe a decade atter that, artifical eggs.

    Whoever cracks this biotech and enables ingredients that provide the umami taste and mouth-feel of meat fat/dairy/eggs will make bajillions.

    I often cook essentially vegetarian food, but add in concentrated chicken stock just to give it some extra oomph. I'd quite happily replace that ooomph with something artificial.

      To join the discussion, there are many that go the vegetarian/vegan route for non health reasons like environmental & ethical.

    • @cont: It's not just umami as such - I used that as a clumsy shorthand. it's the whole egg/dairy/meat thing, but not. I'v been meaning to try those yeast flakesNairn
    • @mono - i suppose it tends upon what 'processed' means. 'Processed' could - probably should - include cheese, pasta, miso, wine, beer etc.Nairn
    • heck, given we've had x tens of thousands of years of grain and livestock modification, i'd even suggest that much of what we consume now 'naturally' is too.Nairn
