I'm hoping we're not more than a decade out from some kind of vat-grown 'dairy molecule' substitution.
Same too vats of complex meat and fat molecules, lipids, long-chain whatevers.
Maybe a decade atter that, artifical eggs.
Whoever cracks this biotech and enables ingredients that provide the umami taste and mouth-feel of meat fat/dairy/eggs will make bajillions.
I often cook essentially vegetarian food, but add in concentrated chicken stock just to give it some extra oomph. I'd quite happily replace that ooomph with something artificial.
- if I was rich and, let's face it - a lot smarter and less prone to writing shit into the void on the internet - I'd spend my days trying to crack this.Nairn
- Is substituting meat with overly processed synthetic foods really a healthier choice? Not critical, but it is a valid question for a bigger discussionmonospaced
- Nairn, if what you're looking for is to add savouriness/umani, just use a bit of marmite instead of chicken stock. A little dab will do you, maybe ...Continuity
- ... a teaspoon or so. The marmite taste disappears, and you're just left with something that tastes more savoury.Continuity
- Also, *umamiContinuity
- Other umami vegetarian/vegan options: nutritional yeast (comes as powder/flakes), and good old monosodium glutamate.Continuity
- Heard of MSG? Science has pretty much pardoned it.jagara

To join the discussion, there are many that go the vegetarian/vegan route for non health reasons like environmental & ethical.deadsperm - I personally don't give a fuck about my health. I'll eat lithium over steak just to prove my point. Apparently, lithium is good for bipolar disorder.deadsperm
- For the rest of you folks, looking for meatless substitutions is plain dumb. They will always just be substitutes.deadsperm
- There is already a big culture of meatless cuisine to be explored.deadsperm
- @deadsperm this is what you get developing food without animal testing, human lab rats consuming everything what triggers their chemosensory mechanism.sted
- but the Agribusiness lobby will do all they can to block all this. Too much money at stake and jobs. Sadly.Bennn
- food from bacteria is some of the oldest and healthiest humanity has, so i'm not sure that why future vat-grown food would necessarily be frankenfood evilNairn
- @cont: It's not just umami as such - I used that as a clumsy shorthand. it's the whole egg/dairy/meat thing, but not. I'v been meaning to try those yeast flakesNairn
- @mono - i suppose it tends upon what 'processed' means. 'Processed' could - probably should - include cheese, pasta, miso, wine, beer etc.Nairn
- heck, given we've had x tens of thousands of years of grain and livestock modification, i'd even suggest that much of what we consume now 'naturally' is too.Nairn
- Oh, forgot to mention - unpasteurised miso paste is The Fucking Bomb. A little bit goes in most things I cook these days.Nairn
