Companies admire real or fake work because it shows initiative. It shows your ambitious and love what you do. A portfolio is is a document showing what your capable of, and thats all you'd be doing.
Also, dont mount your work, its a waste of time, I've never understood why colleges tell their students to do this. Just print everything on A3...looks more professional and weighs less..
