Been eating a lot more higher-protein / lower fat meat lately and that means eating a lot of Eye of Round steaks, which aren't that thick and usually cook to quickly.
Soaked them in Shiner Bock beer for most of the day yesterday before cooking them in a cast iron skillet, having them for lunch today, and that beer is the secret. So tasty and still pretty juicy.
