I find giving an hourly rate and a time estimate works best. I've tried to stop giving firm quotes on pojects whenever possibile. I find clients are much more respectful of my time and understand the cost of changes. I also find that it easily leads to more work. I know this is a little against the trend of giving a definate cost per project, but it works well for me.
