    I reached peak burger-craving this weekend and folded, buying some fatty mince from the butcher, so I could try making 'smash burgers'.

    It's been - according to the recipe thread here - 4 months since I last tried cooking beef at home, so I'm guessing my consumption of bovine flesh isn't a defining aspect of of my character. Anyway, sniping over.. ;)

    'Smash burgers' are basically the zenith of my decades-long quest to make a decent burger at home.

    I'd kind of already arrived roughly at the idea anyway, having travelled a long path of adding onions or flavourings, egg as a binder, etc – to just making basic-seasoned fat patties that I'd smush into the pan as I cooked them.

    The secret to a good burger, as nefulekno is just Keeping It Simple, Stupid and good ingredients.

    So, the following is probably my best median bet for making good burger at home...

    My 'secret sauce' was a bit of a drunken abomination of the version in the video above, replacing 'relish' (which I don't really know what it is) with fine-cut gherkins and shallots (mild and sweet!) and small cubes of tomato.

    I tasted it again today and whilst it's a bit sweet, fuck me it's good. So, on the menu again in an hour or so.

    Oh, and because I don't have the right turner - mine's got large holes in it, I borrowed the technique I saw in the following video of flattening down with a small piece of baking paper...

    The guy has a fucking great get-up. First response in the YT comments list is fucking golden - I highly recommend.
