    For all you stir-fryers, this is an ace, reasonably authentic base sauce.

    1/2 cup oyster sauce
    1/4 cup fish sauce
    1/4 cup dark soy/Tamari
    1/4 cup Shaoxing wine (or dry sherry)
    1/4 cup cornflour
    1 tbsp sugar
    2 tbsp sesame oil
    2 tsp ground white pepper

    Shake it all together in a jar.
    Keeps for yonks in the fridge.

    For a marinade, use it neat.

    For a sauce, use 1-2 tbsp mixed with the same of water, per person.
    Add towards the end, I normally push everything to the side, pour in to heat up, then stir through.

    Since discovering it I haven't used anything else.

    • Well yeah it’s good with that, but works with anything. Just had crispy barramundi with green beans. It’s a scorcher.MrT
