A good buddy of mine started a video studio that he called 'More Burritos,' and worked out of a sprinter van in Los Angeles. I think it's a great idea for that use case because you can shoot on set, and work near your client while you edit.
The only drawback I saw was: even though he had 2 AC units it was still hot AF in the thing (he got a black van tho).
He ended up folding. But it was probably more a case of issues he was dealing with rather than it being a bad idea.
