@Benfal - I did a redesign on www.michaelgallegly.com last year; it used a theme, sure, but several customizations, design aspects, etc.
I don't think using a theme means a site isn't original, especially with the number of people customizing themes to show a visual identity instead of building from scratch. You'll find far more people focusing on the content of the site than building it from the ground up - they either choose that approach regardless of their skill level, or, they just don't have the skills to learn coding, design, etc. Just my 2 cents.
