Imagine for a moment that you're the creator of the gif, and you're given a public forum like the Webby Awards to make a public statement that you're sure could be put on Youtube later for everyone to see. You have two options:
1. Announce that it's "gif" because of "Graphics" Interchange Format. You clear it up forever, a few nerds are satisfied. Everyone stops arguing. Discussion over. Back to work.
2. Announce that it's "JIF" and give no reason at all, and drive everybody crazy because JIF doesn't make any fucking sense. This stirs up controversy and the debate rages on for decades. Half the nerds are pulling their hair out because JIF is fucking ridiculous, the other half are like "BUT HE SAID SO AND HE IS LORD OF THE JIF". For years and years, every time someone says JIF in a sentence, someone else in the boardroom corrects them, and then some super-nerd corrects THEM because Lord Of The Jif said so I can show you on YouTube.
Number two is the correct move. Hats off, epic troll.
