The problem with that video is that evolution has been observed directly, as these examples show:

Creationists would say, these are simply changes within individual species (or "kinds" as they call it), and that you can't actually evolve from one species to another.
But this misses the point because the idea of species is just something made up by humans. Scientists even disagree a lot of time over what actually is a different species and what isn't.

In reality every lifeform is constantly developing genetic mutations and some of those mutations result in an advantage in terms of adaptation to the environment. So the idea that a bear can change colors within its own species, but that it couldn't evolve into a polar bear...what exactly would stop that from happening? If you have enough changes over time then eventually we will recognize it as having evolved into another "species", but there's no official line there that stops it from happening.
