By 'bizarre and trendy' I take it you're leaning towards the more bizarre. Why else make a doco.
So...how bizarre?
Frankly the whole love affair with "hormon" is bizarre enough for me and I don't really venture beyond it. Don't know many that do, or where to find the more bizarre cuts than misc innards, tongue and organs.
Trendy, though...not sure if there's an ongoing trend for anything in particular right now. The trendy cuts (as in expensive and therefor trendy) usually falls onto "kalbi" if you're at a Yakiniku place.
You can find that at just about every yakiniku joint. One of my favorites is "Champion", especially the one in Nakameguro. Partly because I love close by, partly because they're proud enough of their meat to put a freezer-looking window with it for display outside.
You can also find hormon on the menu there together with just about any part you want out of a cow. They might even have a picture of a cow you can point at. Go for the gusto.Trendy places...maybe Kaneshiro is one. Fashionable enough for dates, and they've umbrellas fastened to the ceiling.
