well for one, like literally free apps.. like anything you've paid for from the app store, but for free. (pirated, but free)
You can still use the app store to buy stuff, get DLC, etc.
You get way better customization of sounds, notifications, graphics, interface, etc.
Here are my top 5 reasons to jailbreak:

SBSettings (toggles and brightness / volume control that pulls down from the status bar)
Iconoclasm + Infinidock: more icon customization (more / less icons per page + 'pages' of your dock so you can have multiple docks.
