I'd think about it from the perspective of your potential employer... they're worried that with all your freelance past, you'll bolt the minute a better, even temporary offer comes along. Make it clear to them that, while you love working on innovative projects, you're craving the stability of a company, and you'd be very, very interested in working at a company with multiple projects going on, the infamous "fast paced environment" line in a job description is something you can turn around to your own potential advantage.
Many companies are worried about hiring somebody who can delay and draw out one or two projects forever rather than just finishing things and getting on to the next thing....
But....hmm... I LOVE being a freelancer, having happily left the unfriendly confines of cubeland.... well, okay, most of the agencies I worked for were actually pretty cool... but I like being able to pick and choose....
