Simplest solution..
Write up a proposal - outlining exactly the work you're going to do, deadlines, costings, payment conditions (i.e. 1/3 up front, 1/4 after a certain stage, all on completion), literally all the work you agree to do for a price..
Then get one letter stating that you'll do the work as described, and the client will pay you, as much as stated in the proposal, and in the stages set out in the proposal.
Easiest thing to do for small jobs..
