As I've written in a comment to my comment above: I was just pressing too much buttons simultaneously, in Server Admin Tools. Which was a bad idea, to start with.
After clean re-install of the server I have shared the folders using Server Preferences panel and it worked fine for me. Obviously, it is the same logic as with any other sharing – one can share a folder, but for that one must not share the partition.
It works fine now. All of the 490Gb of data are transfered alright and there will be no problems with "seemingly missing files", which is what I was worrying about. I'd hate to relink every file today, really. :)
I know what aliases are, but that was not my case. Actually, I thought that aliases would work, even though the server is now different. They didn't. At info panel (for a file) there are two "addresses" pointing to the file. One is named "Where", the other one – "Server". Apparently, an aliase uses the server address, whereas InDesign (for instance) uses "Where" address. The latter was giving me headache. All fine now.
