Separate sites. Period. No doubt about it.
I'm a Creative Director with deep illustration, design, animation and retouching backgrounds. I used to have everything on one site, but when I sent it to employers, they either didn't believe I did it all, or—and this is my favorite quote—"didn't know what to do with me."
Split it up. Send the relevant site urls to the relevant recipients. If you have a recipient should/could receive all three, send all three.
