be professional about it, don't work for free.
i also like the 5/50/500 rule for last minute changes. $5 for first round of changes, $50 for second round, $500 for third. of course this is when something is already at the printer, but you could apply it to your rounds of design as well to discourage them art directing and encourage you to do it right the first time.
