I like to ask them about who inspires them, what inspires them, and why. How this inspiration finds its way into their work is important and will give you an idea of what kind of designer they are. If they're more experienced, I have them walk me through a process they thought worked well, and contrarily one that was rough, and to explain why. Of course, ask them about the music they listen to and what their hobbies are. Most of the time I look at their work and just have a good conversation based on what I see.
