I love the Yucatan, have had a couple of great trips down there. Tulum is amazing with gorgeous beaches and although it's getting touristy it's way more mellow than the resorts to the north. I recommend renting a car in Cancun and driving there. The beach is pretty far from the town and if you want to go to store, a cab ride is about 20 minutes. Drive to the Sian Ka'an bio-reserve just south of Tulum there is a Cenote (exposed underground river) just inside the park that you can swim in. Take a day trip to the Coba Mayan ruins less touristy than Chichen Itza. There is also a really cool Cenote just out side the town of Coba. Totally worth cooling off with a swim after visiting the ruins.
Drive back to Cancun, drop of the car and take cab to the bus terminal to grab a bus to Merida. Great colonial city interesting architecture everywhere. Last trip we rented another car in Merida and drove rural roads and worked our way over to Campeche. There are Mayan ruins everywhere, amazing tropical fruit orchards, and Ruins of colonial Henican plantations. We stayed overnight in Campache and drove back to Merida the next day. Tons more recommendations if you want, just shoot me an email. These were pictures from our last trip: http://www.flickr.com/photos/907…
