12pt and 100lb refer to the weight of the stock. Cover means that the stock is card stock, and text refers to paper stock. 12pt stock is sturdy (thin cardboard) without being stiff. 100lb. text is heavy paper stock, but not stiff like card stock.
Coated stock is smooth to the touch and seems to have a shine to it (like magazine pages). Uncoated paper is a more natural, rough feel, such as copy or laser paper.
