I really like GH1 overall. But for pure image quality i'd actually rather use my GF1.
The GH1 is better at high iso, but some models suffer from banding in dark areas in hard to expose scenes, the earlier models in particular. Some users find no banding, others find loads. Of you get one made after jan 2009 you should ok, but the June July 2009 models and onward are all unhackable. The GH1 is a fair bit better at high iso though.
iQ wise, after quite thorough testing, I actually found the GF1 to produce very slightly sharper pics (in good light, remember the GH1 is better high iso), both jpeg and Raw, which is strange becuase most reviews say the opposite. But if you look at samples you can see the GF1 is slightly sharper with better contrast. This discovery was rather dissapointing which is why I returned the Gh1 and waited for the gh2.
Handling wise is felt very good, I really like it. The EVF is very good, but I found the LCD displayed the scene more accurately exposure wise which was a tad annoying.
Handling wise you'll also notice the wheel is in the front by your index finger of your right hand on the GH1 but it is moved o the back by your thumb of your right hand (matching rhe GF1, G1, g2 etc), which is a good move. It's a much nicer place to have it.
I also found the flip out LCD very useful. It's really good for finding those interesting angles without getting your face in the mud.
