Create your form field. Stop editing it, select it then open up the properties.
In the 'options' tab select 'allow rich text formatting' - hit OK.
Now, go back to edit forms mode. Select any text in the form field and then goto View --> Toolbars --> Properties (or hit apple+e).
It should bring up a text formatting menu bar with more options. Then on the right side should be a 'more' button. Once in there select paragraph and adjust line spacing!
Yeah.. it's a bit of a process but glad I figured it out!
