    SuperDuper!
    Carbon Copy Cloner

    Start the new machine in Target Mode (keep T pressed while booting), connect it as a hard drive with FireWire, launch SuperDuper! on the old computer and clone away.

    I also use SuperDuper! for differential backups, works for me better than Time Machine.
