  I just show a thumbnail with the interesting part of the page in it, linking to either the live site or screenshots of it.

  I've seen this used with fake interaction where the buttons on the screenshot are actual buttons that replace the image with the correct screenshot for the page.

  I'd prefer to link to a live site though so if any potential employers want to have a look at the code they can.
