what dbloc said. That's not screen capture, it's straight up flash animation. The picture is getting jagged because they are animating a bitmap image in Flash without bitmap smoothing turned on.
But if you're looking for screen capture software, there's a ton out there. Camtasia Studio's is probably the most well known. Snow Leopards new Quicktime player has it built in.
