I'm with i_monk on this one. It's just a day of practical jokes waiting to be branded, not rebranded imo. Lots of people don't even recognize April 1st as 'April Fools Day'...
But to give an example of a holiday rebranding:
Austin based firm, Under Construction, took on rebranding Valentines day. It was featured on the Studio360 podcast I get.
