something i had to do in an early layout class was we were given a flyer that had a lot of stuff done to the type and had to copy it exactly.
we had to identify the font first (though you can tell them what you use to simplify the assignment). but in laying out the flyer, we found that some of the headers were scaled and loosely tracked, the main header was kerned and the picture had a clipping path and needed to be cleaned up (it was of a tennis shoe. had to take off scuff marks). it's fairly simple, gets them to look at type and apply real-world tasks. don't really have a good idea for Illustrator though. sorry.
