    My question is can you edit opentype fonts the same as PS fonts eg. can i just outline it in illustrator and then import the changed character back into fontographer etc as a outline?

    yes. if you work with FontLab (the demo won't let you generate the font file, otherwise it's fully functional I believe) 1 point in FontLab is 1 point in Illustrator, an artboard of 1000 pt is the best match to the FontLab glyph box (most fonts use 1000UPM) and FontLab uses integer coordiantes for points so some tweaking might be necessary after pasting. Sometimes the contour breaks after pasting, you will have to find the crossed end point and move it over another end point, it will glue them together and make a regular outline.
