    DokuWiki is what I use. I'm using a theme that mimics 37-signals look & feel. It doesn't use a database, it uses a .txt file for each page and a folder for each wiki and they try to keep the wiki code "human readable". Basically, my Time Machine backs it up easily and if I ever have trouble with the Wiki I can just open the text files to get important information out. I've been using it for a while and it's fantastic if you want something simple but flexible. I keep project notes, code snippets, vendor lists, design/programming notes (things I find on the web), contact lists, my business plan, my contracts ... even lunch menus -- basically everything is searchable in a matter of seconds and easily archived. The theme/template system is a little confusing for me (designer, not a programmer by trade) but I easily managed to customize some thing on the interface.
