    Nougat is an aerated candy made from whipped egg whites and a boiled sugar syrup, much like marshmallows. However, unlike marshmallows, nougat is commonly pressed with weights during the drying process, resulting in a compact, dense and chewy candy. Nuts or dried fruit are often added to the candy before it is poured in a pan, covered in rice paper, and pressed under heavy weights for an overnight finishing period.
