you have to select the text, not the text box for it to remain editable if that makes any sense?
Also, play with the preferences in Illustrator, their are some pdf clipboard settings you can change.
I'd give you more detail, but I'm rebuilding this mac after some HD troubles and don't have all the programs reloaded yet.
