Benefits:
- It makes everything customizable. Get rid of default apps, add a theme, change the status bar look at the top, search apps, etc.
- Emulators.
- Organize everything into folders (you can make whatever folders you want and place the apps into them).
To quote someone else:
"The ability to have something other than a jet black, smudge showing wallpaper. Custom, user-selectable icons. Custom buttons and graphics. Custom fonts, a calendar view on the lock screen. Reflective dock. MobileScrobbler. Games. All the iPhone apps, available for free and working perfectly since LONG before the app pack...."

- be careful though. You can restore it if anything goes wrong, but you will have to read through guides on the internet.
