The cappuccino.
Making a good (not perfect, just a good one) cappuccino is a small thing that requires craft and effort
1) The size: The cappuccino is a morning drink to sip slowly but not so slowly, since it was thought to be drank while standing at the bar.
A pint is too much, half a apint in a wide mug is the perfect size.2) The foam. Cappuccino's foam is not supposed to look like (and often taste like) shave foam. A tick foamy cappuccino mixed in a narrow and tall cup is the very definition of evil.
The foam should be creamy and be a not so thick layer on the top of the creamy milk underneath. A wide cup is used beacuse helps to have the foam spread around.3) The coffee and the milk. You don't just to an americano, add a bit of milk and you're done. The capuccino screams for a top quality espresso coffee, as black as hell. The milk should be warmed for a bit and not full steam. The Milk should become creamy. and the foam (see above not so thick) And when the warming is done you shouldn't just throw over the coffee but it should be stirred for the whole milk to be uniformly creamy and shaken just a couple of times to have the thicker foam which, let me stress this out, isn't as thick as shave-foam.
4) The pouring.
Half of the magic of a well done cappuccino is on the puring.
Once you have the coffee on the cup and the milk on the kettle, you should pur add the milk to the coffee in different flows.
The first flow should be done strongly (let's say half of the cup)so the milk goes underneath the coffee and the coffee blends with the creamy milk. The next flows should be easier. At this point some of the foam is already on the cup and you end up adding the last bit of foam gently and, if you like, in an artistic way.A bit of pure chocolate powder on the top, but not too much and you're done.
