    To answer the original question: I think companies/agencies are showing off "interactive" (Flash) work because they're impressive portfolio pieces. Clients are impressed when things animate, they see products in 3D, full HD video is used on a website, etc. It's classic SOS (shiny object syndrome.) The client has no idea what goes in to making a web standards compliant site render correctly cross-platform, the logic behind user experience and IA choice, why the site is 'accessible' or any other technical decisions. Clients tend to be visual, not logical. This is the same reason most coders show a screenshot of the site they worked on when they had nothing to do with the interface. If they put up a block of code the client wouldn't know what the hell they're looking at but if the client sees a website front-end then they judge that because the front-end looks nice the back-end must as well.

    The other reason, I'm going to assume here, is that interactive (Flash) projects are fun to work on. As professionals, of course we're going to try to get more projects like the ones we enjoy. Not to mention there tends to be a premium price put on Flash work and so the agencies want more of that work to come in as well.
