A user's default views in Acrobat Professional will ALWAYS override the author's intended views, even if they're set up correctly. I do it every, single, day. My preferences always override the document's, even the ones I set myself. On other computers where I haven't set the viewing defaults, the document's viewing prefs will be seen.
End result, don't trust the view properties you set for a PDF within Acrobat. The only guaranteed way of getting them to view the PDF the way you intend is to output it that way from within InDesign, which is what I suggested hours ago.
