It really doesn't matter how much time it took you to create a logo. Identity design usually comes with it's own pricing structure and purchasing the rights to the work (so the client has full ownership) is not uncommon. All of this should definitely be in a written contract but since it's after the fact you'll have to just stick to your guns and if she doesn't come around you may want to seek legal advice. Would be best to avoid a legal battle though.
