I would avoid sIFR, unless it's for a really big project, where your client has to be able to create custom headlines via a CMS or the like. Using it for body copy would be overkill, in my opinion.
First of all, it relies on Flash and thus it is less accessible than a regular CSS solution, ie. <h1> with background image.
Second, it does not give you control on character level. That leaves you with auto kerning, and that's too bad INNIT? :)
In addition to that, you have to implement sIFR into what ever solution you deliver to your client. Sometimes it's easy and sometimes it's a nag job. Depends, but you should take it into consideration.
