    my mom's recipe (I can't believe I'm giving this away!)

    ENJOY!!

    Ingredients:

    ¼ c of vegetable oil (original recipe calls for ½ cup)
    1 cup yellow cornmeal
    ½ teaspoon baking soda (make sure not lumpy)
    1 tsp salt
    1 cup milk
    2 eggs
    1 small can cream style corn
    1 cup shredded cheddar cheese
    ½ cup diced onions
    Sliced Jalapeño peppers (one small or to taste)

    Heat oven to 475 degrees

    Place ¼ c of vegetable oil in iron skillet and heat in hot oven for 10 minutes prior to pouring cornbread mixture in.

    Mix the following:

    1 cup yellow cornmeal
    ½ teaspoon baking soda
    1 tsp salt

    Mix dry ingredients thoroughly making sure baking soda is distributed evenly.

    ADD:

    1 cup milk
    2 eggs
    1 small can cream style corn
    1 cup shredded cheddar cheese
    ½ cup diced onions
    Sliced Jalapeño peppers (one small or to taste)

    Mix thoroughly.

    ADD:

    Very carefully pour the hot oil from the black iron skillet into the batter (should sizzle) and stir thoroughly.

    Pour the batter into the hot skillet (should sizzle)

    Place in 475 degree oven for 15 minutes. Turn oven down to 325 degrees and continue baking 15 minutes.

    Remove from oven and let cool slightly before cutting.
