    David, whats you'd do is:

    Dots:
    Create a series of dots all the same size then either scale some of them down or add a stroke to make the optical difference.

    Lines:
    Create your grid of lines in white over your background with say a 1pt stroke, then group. Then copy the group and place on a new layer, make these 2pt. Put your text over the 2pt strokes and create a clipping mask.

    Or try out scriptographer for the dots one, although it'll take a fair bit of dicking around to get it right.
