    My gf is vegetarian as well. But she cooks the meat for me.
    Why don't you cook separate courses sometimes.
    Or structure your meal italian way with 2 courses:
    First course something vegetarian (pasta, rice)
    Second course: your choice: can be meat for you and veggies for her or whatever.
