This is like saying "why are there no 45 year old receptionists?" Because hopefully by that time you've moved into something that pays better. To everyone in the office who's not creative, "Graphic Designer" means "Photoshop Guy". My buddy owns a shop and changed his title to "VP of Creative Technology" after he got a card from one of the senior guys at Chiat Day. He jokinly told me "It means whatever it needs to mean to make you to feel better about you giving me your project". I like titles either VP or Director in them only because non-creative people take them seriously. And really, does the title "Graphic Designer" mean anything? My experience was it that meant no one wanted to trust me with high level creative decisions.
