Ableton Live:
and here is why:
First, simplistic design, no unnecessary elements, yet fully customizable.
The interface progresses according to your experience level, it starts simply enough for you to make a music loop in 3 seconds, even if you have never made music before.
There is a help tab that's always visible (unless you dock it) that will tell you what everything does, just by hovering the area with your cursor.
The drag/ zoom on timlines (video editing apps like FCP, AVID or even AE should take note) click hold on timeline, drag down ZOOMS IN, click hold drag up, ZOOMS OUT. is so natural and practical, why is this not standard yet?
On a subjective note, this is to me, the best looking app out there of any kind. (so far at least)
