That's because school can't teach you how to deal with clients, because there is no way to replicate a real client interaction in school. Every client is different.
Nor can anyone can even begin to replicate the random things that just happen to set someone off that day(spouses, kids, mortgages). And then there are middle managers attempting to justify their existence at their jobs.
School is meant to teach you fundamentals of design and how to think. As much as CD & AD may not want to do it, only a real job can teach you real life experiences. That's why you get internships.
